Temperature sender on Lancia Beta 1919 ccm motor

Hello Guy:
My motor has two temperature sender:
- One for the gauge.
- Another for the red alarm lamp.
My cuestion is where are the right place for them and what can happen if I change positions in the cylinder head. Will I found very different and wrong numbers?Is so critical this position?Do you know aprox with these settings where should be the hottest and dangerous point in this head?
I have only one cylinder head 75‚ºC thermostat, standar water cooler and the back of the head is directly connected to the water pump, plus 13 row oil cooler at the front.
Now the summer is coming and here, in the South of Spain, is very important to keep the motor cool on our congestioned turist highway traffic...
